My son asked me for to make spaghetti tacos. I had never heard of such a thing and had no idea he did either. But when he asks for a special food, I try very hard to please him. That little boy seldom asks for anything. I had no idea where to start so I just decided to get creative and combine the two dishes.This is the result and they really were very good
note: we do not eat meat so I used a substitute for ground beef. Use one pound of ground beef if you are a carnivore.
Ingredients:
- 1/4 bag of TVP (texturized vegetable protein) soaked in a small amount of water to soften
- 1 pkg taco seasoning
- 1 cup chopped onions
- 2 tbl oil
- 1 pkg taco shells or make your own
- shredded cheddar cheese
- salt and pepper to taste
- 4 ounces spaghetti broken in to two inch pieces and cooked al dente or leave long, only breaking the spaghetti one time in the middle. Then it will hang out of the shell on each side.
Heat oil in skillet until medium got then stir in onions, season to taste. Cook until onion is tender.
Add TVP and stir well. Cook until mixture browns.
Stir in taco seasoning and remove from heat.

Assemble The Tacos
Place one spoonful of taco "meat" in bottom of shell. Sprinkle with cheese. Layer on a pinch of spaghetti, top with more cheese. Add one more layer of "meat" and spaghetti, then top with taco sauce, cheese and onion.
If the taco sauce is too spicy for children, use chunky vegetable spaghetti sauce for them.
Optional toppings:
- jalapenos, chopped
- green olives, chopped
- sour cream
- guacamole
- iceberg lettuce, shredded
- colored bell peppers, chopped
- tomatoes, chopped
- black beans
- fresh cilantro
- greek yogurt
